We’re non-vegans in love with these vegan thumbprint cookies. They’re a wonderful treat for the health conscious person who wants to enjoy desserts from time to time. Just the other day, my fiance was craving these and kept asking me why we don’t have jam. And on a cool, rainy day like yesterday (hello there, Seattle summer), these would have been perfect with some afternoon tea . . . if we had jam. Speaking of jam, we made ours with strawberry, but any other flavor will do. The best part is you really don’t have to use much jam at all.
